Easy Cinnamon Roll Muffins Recipe

In this article, I am going to teach you all how to make the easiest cinnamon roll muffins you've ever made. And this is healthy. 

There is some sugar, but it's low glycemic index. You'll know what I mean once we get in to the recipe. 

This is a healthy baked good and gluten free, that is if you get the right flour and not kings Arthur. So let's right to it.

Cinnamon Roll Muffins Ingredients

Listen my friend, you gotta get all bob's red mill, don't fucking get the off brand kind that you normally get. 

You need to get this brand. The reason? Flour varies and not all flour is created equal. Plus you will get a different texture. If you want this to taste nice and moist, then I'm telling you from experience, get this brand. 

Here's what you need to make cinnamon roll muffins:

  • 1/2 cup of unsweetened coconut milk from the carton
  • 1/2 cup of pure maple syrup 
  • 1/4 cup of ghee
  • 1 tsp of pure vanilla extract
  • 1 large egg
  • 1/2 cup of coconut sugar
  • 1 tsp of ground cinnamon
  • 1 dash of nutmeg
  • 1 1/2 cups of all-purpose flour Bob's Red Mill
  • 1/2 cup of almond flour
  • 1 1/12 tsp of baking powder
  • 1/2 tsp of sea salt
  • 3 tbsp of reduced fat sour cream
  • 3 tsp light brown sugar

Not so bad right? A lot of these ingredients can be found at maximum $14 dollars for some ingredients. Just remember, regular muffins contains DOUBLE THE SUGAR CONTENT. 

So don't get caught up thinking light brown sugar will kill you. It's just for the frosting.

Preheat Oven for Cinnamon Roll Muffins

Preheat your oven to 350 degrees. Don't forget this step. You also need muffin papers and cupcake liners. 

So do not forget to have these before you make this recipe. You need to be prepared. 

I've made this recipe many times. It's not hard to make at all. 

Line Twelve-Cup Muffin Pan With Muffin Liners

This should be self explanatory for cooking baked goods. I hope you understand this step. 

Simply put, just have twelve cup muffin pans. Spray both pans. Then add the muffin liners so it doesn't stick. 

Lightly coat with olive oil spray. This helps you get the muffins out after it's done cooking in the oven.

Blend Wet Ingredients

Blend the wet ingredients to make cinnamon roll muffins

To make these delicious cinnamon roll muffins, combine these ingredients in a blender or food processor. 

  • 1/2 cup of Coconut sugar
  • 1/2 cup of Coconut milk
  • 1/2 cup of Maple syrup
  • 1/4 cup of Ghee 
  • One egg
  • 1 tsp of Cinnamon
  • 1 dash of Nutmeg

Blend this for about 60 seconds. Honestly, a blender works better than a food processor. 

You want the ghee to smooth out with everything else. Now the hardest part is done. The rest is easy.

Combine Dry Ingredients in Mixing Bowl

It's time to add the dry ingredients in to a mixing bowl. 

  • 1 1/2 cups of Bob's Red Mill all-purpose flour
  • 1/2 cup of Almond flour
  • 1 1/12 tsp of Baking powder
  • 1/2 tsp of Salt

Easy. Nothing to overthink here. Just combine the ingredients. This is why I love this recipe, it's not hard to make.

Add Flour Mixture to Blender

Make sure you've mixed up the ingredients in the bowl. Now it's time to add that to the blender. Not so bad right? 

Again, muffins are very easy. This step is you simply add the flour mixture, then you blend it until its smooth. 

Make sure it's nice and smooth. Don't have any clumps. 

Divide Batter Among Each Muffin Cups

Listen my friend, if you blend this really good, you can make 12 muffins with this. 

So let's get to it. You want three tablespoons of the batter in each muffin cup so measure this correctly, don't overflow and make a mess.

This step gets easier and easier the more you make this dish. 

Just make sure that you get the batter three quarters up the muffin cup.

Bake For 20 Minutes at 350 Degrees

I encourage you to bake this the full twenty minutes. 

You'll love how it turns out. This tastes like cake. So make this my friend.

Rotate the pan halfway through the bake time.

Make The Icing While it Bakes

While this is baking, combine the sour cream with light brown sugar in a mixing bowl. 

Very easy, just use a fork and stir that shit together. Stir it until it looks like the picture above. 

Don't overlook this step as this is what makes the cinnamon roll muffins so fucking good. 

Stir it until it's fully combined. Then top each muffin when its done baking. 

You want 1 1/2 tbsp of the icing on each muffin.

As you can see, this is an extremely easy recipe, I wasn't lying when I said that this is an easy cinnamon roll muffin recipe.

You can store this in an airtight container and it last up to four days when it's nice and chilled.
